What? I thought you said this was a vegetarian meal? It is! These stuffed Poblano Peppers will fool you easily into thinking this is a meat dish - it's so good! But I guess you want to see what kind of vegetarian meat this is.
Here's the wrapper before I throw it away. This is a product called 'Gimme Lean'. It's found in most grocery stores these days. And it is made from wheat believe it or not! Now how is this done you ask?
Simply brown the 'meat' in a little olive oil and add some chili powder, and garlic. Don't worry it browns nicely just like the artery clogging, fattening, red stuff. Why use this? All the healthy benefits are enough to encourage me to try it - so we did, and to our surprise..... it's pretty good! Not to mention it's so much lower in calories and fat content. A great incentive all by itself!
Chop finely a fresh green - or red pepper and a yellow onion. Slice open a poblano pepper longways and take the seeds out. (Unless you enjoy a fiery very hot dish)
Stuff each one with 'meat' and anything else you may want to. Bell peppers, onions, tomato's, cilantro, and or any kind of grated cheese if you like. I used almond cheese here.
Bake them for 30 minutes at 350 Put the cheese on in the last five minutes. Serve with a fresh salad and some polento and a great supper is on the table pronto!
