The most favorite ethnic food of all the different nationalities of food that my husband and I have eaten - is food from Thailand! It is the most fragrant and so full of flavor, one cannot help but fully enjoy the food!
So Thai Spring Rolls are a real treat any time we can have them. So I am making them as a special evening appetizer for my family. Everyone in my family loves these!
The ingredients are simple and made from whole organic foods that are good for you as well as good to eat. So gather up lettuce leaves, sliced red peppers, mung bean sprouts, grate some fresh carrots, long sprigs of cilantro, and rice sticks - noodles (these look like skinny long white sticks). Oh don't forget the Spring Roll wraps. Gather as much as you like!
Start some water boiling and add the rice sticks and cook them for 3 minutes. Drain them as soon as you have cooked them so they won't get mushy.
And the Spring Roll wraps (which can be bought in a Asian grocery store) or the international isle at a good grocery store. These look complicated but they are soooo easy to use.
All you do is dip each wrap in warm water and they are ready to wrap up whatever veggies that are prepared.
Lay the wrap on a plate and take a crisp clean lettuce leaf and lay it on top.
Lay some rice sticks on top of the lettuce.
Put some sprigs of cilantro on noodles
Add some mung bean sprouts and get ready to roll!
Take the edge of the wrap and fold it over the veggies and firmly tuck the ends in as you roll it. Wrap it tightly and when you get to the end .... just roll it over on it's self and it will hold.
Anything can be used as filling. Such as grilled meats. These just happen to be vegetarian rolls.
Slice each one in half with a sharp knife, and place on a serving dish along with some homemade spicy Thai Peanut Sauce and my whole family can't wait to get their hands on these. MMMMM so very good!!! Maybe I should have made more!
